
When I'm super busy or have just finished a hectic day at work sometimes I just want something I can whip up in minimal effort. That's why I wanted to share this recipe for lentil soup, for those of you who are too tired to cook at the end of the day and just want an easy throw it together meal that will feed the masses for the rest of the week. This recipe is also great to cook ahead and freeze for lunches as it reheats beautifully.
Easy Lentil Vegetable Soup
Serves 6
Ingredients:
2 garlic cloves (minced)
One onion diced
3 celery stalks diced
2 tablespoons of olive oil
150g red lentils, rinsed or soaked overnight
150g split peas soaked overnight
400g tin of chopped tomatoes
800g of boiling water
1 salt reduced vegetable stock cube
1 tablespoon of tomato paste
1/2 tsp of paprika
Directions:
Warm olive oil a large saucepan on medium heat.
Add garlic, onion and celery and sauté for 5 minutes.
Add lentils, split peas, tomatoes, water, stock cube, tomato paste, and paprika and bring to the boil.
Simmer for 40-60 minutes until lentils and peas are well cooked.
Divide between serving bowls and serve hot.
