Baked beans are one of those super nourishing recipes that is high in fibre, protein and nutrients like thiamine, zinc, iron, and selenium. These nutrients support energy production, immune health, and thyroid function in the body.
The only major drawback is that tinned versions can contain added sugar, salt, and food additives. This can all be minimised by making baked beans from scratch, which is a quick and easy recipe and the carrot and capsicum can be swapped for seasonal vegetables for some extra antioxidants and nutrients.
This recipe is great for those who are on the go but still want to enjoy a nutritious and energising breakfast. It can be meal prepped and cooked the night before and consumed for lunch with a green salad on the side.

Home Made Baked Beans Recipe
Ingredients:
One brown onion
2 garlic cloves
2cm piece of ginger
2 carrots
1 red and 1 green capsicum
2 red chillies
30g olive oil
50g tomato paste
1 tsp paprika
1 tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
2 tomatoes or tin of tomatoes (no added salt)
1 tin of cannellini beans
Method:
Heat olive oil in saucepan on medium heat.
Dice onion, mince garlic and ginger and add to saucepan with spices and tomato paste and cook for 5 minutes.
Add grated carrots and diced capsicum and cook for a further 5 minutes.
Add tomatoes or tinned tomatoes and bring to the boil. Simmer for 20 minutes.
Add beans and cook for 3 minutes.
Serve warm or cold with seasonal salad or sourdough.
