🥗 Soba Noodle and Tofu Salad: Perfect for Meal Prep! 🥗

Looking for a delicious and healthy meal to prep for the week? Try this Soba Noodle and Tofu Salad! It's perfect for lunch or dinner and packed with nutrients to keep you energised and satisfied. 🌿✨


Ingredients:

Salad:

200g soba noodles

1 block of firm tofu, pressed and cubed

1 cup edamame beans, cooked and shelled

1 carrot, julienned

1 cucumber, julienned

1 bell pepper, thinly sliced

2 spring onions, chopped

1 avocado, sliced

A handful of fresh cilantro, chopped

Sesame seeds for garnish


Dressing:

1/4 cup soy sauce or tamari

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 clove garlic, minced

1 teaspoon grated ginger

Juice of 1 lime


Instructions:

Cook the Soba Noodles:

Cook the soba noodles according to the package instructions.

Drain and rinse under cold water to stop the cooking process.

Set aside.


Prepare the Tofu:

Press the tofu to remove excess moisture.

Cut into cubes.

Sauté the tofu cubes in a non-stick pan until golden brown.


Prepare the Vegetables:

Julienne the carrot and cucumber.

Thinly slice the bell pepper and chop the spring onions.

Cook and shell the edamame beans.

Slice the avocado and chop the cilantro.


Make the Dressing:

In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, minced garlic, grated ginger, and lime juice.


Assemble the Salad:

In a large bowl, combine the soba noodles, tofu, and all the prepared vegetables.

Pour the dressing over the salad and toss to combine.

Garnish with fresh cilantro and sesame seeds.


Serve or Store:

Serve immediately or divide into meal prep containers for the week.

Store in the fridge for up to 3-4 days.
